Pepper Jack Mac-N Cheese - (Makes 4 to 6 servings)

 

Ingredients:

2 1/2 cups elbow macaroni

1 cup heavy cream

2 cups chicken stock

1 teaspoon salt

1 teaspoon ground black pepper

1 tablespoon butter

1/2 cup whole milk

1 1/2 cups mozzarella cheese, shredded

1 1/2 cups pepper jack cheese, shredded

 

 

1.  Add the macaroni, heavy cream and stock to the Instant Pot.

 

2.  Season with salt and pepper, stir well.  Close and secure the lid.

 

3.  Select Manual and cook at HIGH pressure for 7 minutes.

 

4.  When the timer beeps, use a Quick Release.  Carefully open the lid.

 

5. Add the butter, milk and cheese.  Stir well and let sit for 5 minutes then serve.

 


 

Macaroni & Cheese - (Makes 4 to 6 servings)

 

Ingredients:

1 lb. elbow macaroni

3 tablespoons unsalted butter

4 cups chicken or vegetable broth, low sodium

3 cups Cheddar cheese shredded (12 oz.)

1/2 cup Parmesan cheese, shredded (12 oz.)

1/2 cup sour cream

1/8 teaspoon cayenne pepper

1 1/2 teaspoon yellow mustard

 

 

1.  In the Instant Pot, combine the macaroni, butter, and broth.

 

2.  Close and secure the lid.  Select Manual and cook at HIGH pressure for 6 minutes.

 

3.  When the timer beeps, use a Quick Release.  Carefully open the lid.

 

4.  Add the cheese, sour cream, cayenne pepper, and mustard.  Mix well.

 

5.  Let sit for 5 minutes, then stir and serve.

 


 

Chicken Alfredo Pasta - (Makes 2 servings)

 

Ingredients:

8 oz. fettuccine, halved

2 cups water

2 teaspoon chicken seasoning

1 jar (15 oz.) Alfredo sauce

1 cup cooked & diced chicken

Salt & ground black pepper, to taste

 

 

1.  Pour the water in the Instant Pot and add the pasta and chicken seasoning.  Stir well.

 

2.  Close and secure the lid.  Select Manual and cook at HIGH pressure for 3 minutes.

 

3.  Once pressure cooking is complete, use a Quick Release.  Carefully open the lid.

 

4.  Drain the pasta and add to serving bowl.

 

5.  Add the sauce and cooked chicken.  Season with salt and pepper to taste.

 

6.  Stir well and serve.

 


 

Pasta with Meat Sauce - (Makes 4 servings)

 

Ingredients:

1 teaspoon olive oil

1lb. ground beef

8 oz. dried pasta

1 1/2 cup water

24 oz. pasta sauce

Italian seasoning, to taste

Salt & ground black pepper, to taste

 

 

1.  Preheat the Instant Pot by selecting SAUTE.  Add and heat the oil.

 

2.  Add the ground beef and cook until all the meat is browned, stirring occasionally.

 

3.  Add the pasta, water and sauce, stir well.

 

4.  Press CANCEL to stop the SAUTE function.

 

5.  Close and secure the lid.  Select Manual and cook at HIGH pressure for 7 minutes.

 

6.  When the timer beeps, use a Quick Release.  Carefully open the lid.

 

7. Sprinkle with Italian seasoning, alt and pepper to taste.  Stir and serve.

 


 

Cheesy Beef Pasta - (Makes 4 to 6 servings)

 

Ingredients:

1 teaspoon olive oil

1 1/4 lbs ground beef

3 1/2 cups hot water

1 packet onion soup mix

3 beef bouillon cubes

1 lb. elbow macaroni

8 oz. sharp cheddar cheese, shredded

Salt & ground black pepper, to taste

 

 

1.  Preheat the Instant Pot by selecting SAUTE.  Add and heat the oil.

 

2.  Add the ground beef and cook until all the meat is browned, stirring occasionally.

 

3.  In a bowl, combine the water, onion soup mix, and bouillon cubes.

 

4.  Add the mixture and macaroni to the pot. Stir well.

 

5.  Press CANCEL to reset cooking program, then press MANUAL and cook at HIGH pressure for 7 minutes.

 

6.  Once pressure cooking is complete, select CANCEL and use a Quick Release.  Carefully open the lid.

 

7.  Sprinkle with cheddar cheese, stir and let sit for 5 minutes.

 

8.  Taste and season with salt and pepper if necessary then serve.

 


 

Instant Pot Carbonara - (Makes 4 servings)

 

Ingredients:

1 lb. dry pasta, rigatoni or penne are great

4 cups water

1/4 teaspoon kosher salt

4 large eggs, beaten

1 cup Parmesan cheese, grated

Ground black pepper, to taste

8 oz. bacon or pancetta

4 tablespoons heavy cream.

 

 

1.  Add the pasta, water and salt to the Instant Pot.

 

2.  Close and secure the lid.  Select Manual and cook at HIGH pressure for 5 minutes.

 

3.  Meanwhile, in a bowl, whisk together the eggs, cheese and black pepper until combined.

 

4.  In a frying pan, cook the bacon on medium heat for 3 minutes, or until crispy.

 

5.  hen the timer beeps, use a Quick Release.  Carefully open the lid.

 

6.  Set the Instant Pot on SAUTE mode.

 

7.  Add the bacon to the pot and cook for 30 seconds.

 

8.  Pour in the egg mixture and heavy cream.  Stir well to combine.

 

9.  Press the CANCEL button to stop the SAUTE function.

 

10. Close the lid and let it sit for 5 minutes then serve.

 


 

Seafood Pasta - (Makes 4 to 6 servings)

 

Ingredients:

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, chopped

2 tomatoes, chopped

1 red bell pepper, seeded & chopped

1/2 cup dry white wine

2 cups vegetable stock

2 cups macaroni

1 1/2 cups frozen mixed seafood

1 teaspoon mixed herbs

1 tablespoon tomato puree

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1/2 cup Parmesan cheese, grated

 

 

1.   Preheat the Instant Pot by selecting SAUTE.  Add and heat the oil.

 

2.  Add the onion and garlic then sauté for 2 minutes.

 

3.  Add the tomatoes and bell pepper and cook for 2 minutes more.

 

4.  Pour in the wine and stir ell.  Simmer for 5 minutes.

 

5.  Add the stock, macaroni, seafood, herbs, and tomato puree.  Season with salt and pepper.  Stir well to combine.

 

6.  Press the CANCEL button to reset the cooking program, then press MANUAL and cook at HIGH pressure for 5 minutes.

 

7.  Once pressure cooking is complete, select CANCEL and use a Quick Release.  Carefully open the lid.

 

8.  Top with cheese and serve.
